Masala Omelette
For the actual omelette
3 eggs
1 spring onion
half a red chilli
For the filling
mushrooms
cherry tomatoes
spinach
courgette
coriander
2 cloves garlic
2 tbsp garam masala
Time: 10 minutes
Start by heating the oil in a pan, add garam masala and garlic for two minutes until adding the tomatoes, mushrooms, courgette and coriander. Squash the tomatoes and then add the spinach.
Mix the finely chopped spring onion, red chilli and ground pepper in with the beaten eggs and pour into a heated pan. You'll know when it's done.
Top with coriander, sriracha and half an avocado. The easiest and simplest spiced breakfast.
